Ingredients
🍤 400g Shrimp Rei dos Mares
🥛 1 liter Milk
🌾 2 cups Wheat Flour unfermented using a 120ml cup
🥥 200ml Coconut Milk SOCOCO
🌴 50ml Dendê Oil Palm Oil
🧄 4 Garlic Cloves mashed
🧅 1 Medium Onion finely chopped
🍅 1 Medium Tomato finely chopped
🫑 1 Medium Green Bell Pepper finely chopped
🌶️ 1 Medium Red Bell Pepper finely chopped
🌿 Fresh Herbs Cheiro Verde cilantro and spring onion chopped
🌿 Chimichurri about 1-2 teaspoons
🍋 1 packet Sazón lemon flavor Sazón
🌶️ Sweet Paprika Páprica Doce or Colorau about 1 teaspoon
🧂 Pink Salt about 1 teaspoon
Instructions
1- Sauté Vegetables:
- Heat the dendê oil in a Consul gas stovetop pot over medium heat.
- Add mashed garlic, sauté until fragrant. Add onion, tomato, green and red bell peppers.
- Cook until vegetables are well-mushed and soft, about 5-7 minutes.
2- Season:
- Add chimichurri, Sazón, and paprika to vegetables.
- Stir well.
3- Cook Shrimp:
- Incorporate shrimp into the seasoned vegetable mix.
- Cook until shrimp turn pink, approximately 3-4 minutes.
4- Blend Milk and Flour:
- In a blender, combine wheat flour and milk until smooth.
- Ensure no lumps remain.
5- Combine Ingredients:
- Pour the smooth milk mixture into the pot.
- Stir continuously to integrate with the shrimp and vegetables.
6- Thicken Vatapá:
- Add coconut milk, stir, and thicken over approximately 30 minutes.
- Keep stirring to prevent sticking.
7- Adjust and Finish:
- Add salt to taste and remove from heat once desired consistency is reached.
- Stir in fresh herbs if desired.
8- Serve:
- Serve the vatapá warm, garnishing with additional fresh chopped herbs.
