Ingredients
🌿 1 kg peeled cassava Mandioca/Aipim/Macaxeira
💧 Enough water to cover the cassava in the pressure cooker
🧈 1 tablespoon margarine or butter Delícia
🧅 1 small onion cut in a cross
🧈 2-3 tablespoons margarine or butter Delícia
🫒 1 tablespoon oil generic
🧅 1 medium onion chopped
🌭 4 links Tuscan sausage casing removed, meat broken up
🧄 6-8 cloves garlic minced
🍃 1 teaspoon Bahian seasoning Tempero Baiano
🧂 A pinch of salt
🌿 A pinch of oregano
🍅 1 large chopped tomato or 2 small
🌿 Green herbs cheiro verde, e.g., parsley, chives, or cilantro
Instructions
1- Cooking the Cassava:
- Place 1 kg of peeled cassava in a pressure cooker.
- Add enough water to cover the cassava; include 1 tablespoon of Delícia margarine and 1 cross-cut small onion.
- Seal the pressure cooker and cook on an Electrolux stovetop. Begin timing once it whistles: 5 minutes for soft cassava, 7-10 minutes for harder varieties.
- Carefully release pressure. Rinse under cold water if very soft. Transfer to a white rectangular serving dish.
2- Preparing the Sausage Seasoning:
- Open 4 Tuscan sausage links by making slits and removing casings. Break meat apart with a fork, discarding excess fat or sinew.
- Heat a red non-stick frying pan on the stove.
- Melt 2-3 tablespoons Delícia margarine with 1 tablespoon oil in the pan.
- Sauté 6-8 minced garlic cloves until golden.
- Add sausage meat, cooking and breaking it up until browned.
- Stir in the chopped medium onion, cooking until translucent.
- Mix in Bahian seasoning, salt, oregano, and chopped tomatoes. Cook tomatoes for 2 minutes until slightly soft.
- Turn off heat. Stir in green herbs.
3- Serving:
- Evenly spread the hot seasoned sausage mixture over cassava in the serving dish.
- Serve immediately and enjoy the vibrant flavors.
