Ingredients
🍗 3 cups shredded rotisserie chicken

🧀 1 cup shredded Colby Jack
🧄 4 cloves garlic, minced
🌶️ 1 green bell pepper, diced
🍊 1 orange bell pepper, diced
🧅 1 large onion, diced
🌿 1/2 cup fresh cilantro, chopped
🌶️ 1 tablespoon chili powder
🧂 1 tablespoon garlic powder
🌶️ 1 tablespoon paprika
🌿 1 tablespoon oregano
🧂 1 teaspoon salt
🌿 1/2 teaspoon cumin
🌶️ 1/2 teaspoon chili flakes

🌮 28 flour tortillas

Instructions
1- Preheat the Oven:
- Preheat the oven to 375°F (190°C).
2- Sauté Vegetables:
- In a large non-stick pan, heat 4 tablespoons of oil over medium heat.
- Add the diced onions and bell peppers; sauté for 4–5 minutes until softened.
3- Add Garlic and Chicken:
- Add the minced garlic and sauté for an additional 30 seconds until fragrant.
- Stir in the shredded chicken, then add all the spices (paprika, garlic powder, chili powder, oregano, salt, cumin, black pepper, chili flakes), mixing well to coat the chicken evenly.
4- Melt Cheese and Combine Ingredients:
- Add the cream cheese and stir until melted and creamy.
- Pour in the heavy cream and mix until smooth.
- Stir in the black beans and corn, mixing well to combine.
5- Add Cheese and Cilantro:
- Remove the pan from heat and mix in the shredded mozzarella and Colby Jack until melted.
- Fold in the chopped fresh cilantro.
6- Prepare Tortillas:
- Warm the flour tortillas in the microwave for about 30 seconds to make them pliable.
7- Assemble Taquitos:
- Place 3-4 tablespoons of the chicken mixture onto each tortilla, roll tightly, and place them seam-side down on a parchment-lined baking sheet.
- Generously spray the tops with avocado cooking spray.
8- Bake and Broil Taquitos:
- Bake for 22-25 minutes until golden and crispy.
- For added color and crispiness, broil the taquitos for about 1 minute.
9- Serve:
- Serve with lime wedges and your choice of dipping sauce.
