I like cooking and i appreciate flavor, taste, texture, but most of all respect of the original recipe.
Since the new wave of bullshit avant-garde cooking and all these TV shows that push people to look for impossible ways of experiencing eating i love making fun of the ridiculous efforts made by chefs everywhere to present tradiotional stuff in a different way.
Ferran Adria is the worse of all... He thinks he is god and has screwed every single traditional spanish dish into an impossible pile of shit... look here:

So after a light lunch where i showed him the perfect way to make a crusty saumon filet following Gordon Ramsay recipe
I watched that video and since last time i made a poached egg for the garlic soup... It came to me that there was a better way to revisit the Tortilla without killing its essence.
It is basically poached onions on butter and deglasee with beer to maillardise it, a few thick potato chips on top of a poached egg.
And guess what, not only it tastes as a spanish tortilla, it feels like eating one, with the creaminess of the egg, the slight crunch of the chips and the onions still firm but chewable...
I dressed it in a hurry as i had something else to do, it did not take more time than making a real tortilla, i used way less oil than what is normally used and i didn't have any greens at hand to enhance the visual impact.
Next time i will fine tune it a little bit by serving it in a bed of roquette with an additional layer of poached onions and chips but In all I am very satisfied with the result and the veredict was that i should make them next time we invite his local friends for dinner as an entree.
