Should you not be careful to steam sterilise the jars first? For long term ambient storage of a food product, especially containing sugar, surely this is vital? Sounds delicious otherwise though

I love bbq fish, and the banana leaf is a great idea to prevent sticking. Hmm I wonder where I could get them in Europe though...
