Everybody’s favorite comfort food and since it was Sunday, I decided to give it a try. It was the first time I did this dish and in the end I will tell what I would different next.
But you can’t go wrong with macaroni and cheese.
Let’s do this.
What you need
A packet of macaroni. 500 gr.
A can of mushrooms. Because why not, I love mushrooms.
Sausage. As if it wasn’t fatty enough. Come on, it is comfort food , take it to the extreme.
Mix of cheeses. 100 gr of mozzarella , cheddar and graviera ( greek salty hard cheese )
Cheese cream. 200 gr
Salt, pepper and oregano.
I think you can add your favorite food of choice.
Putting it all together
I wanted to keep it simple. I could fry the sausage and the mushrooms and put them after the macaroni was cooked, but I was little bit bored and decided to cook them all together.
You add in your pot water, the sausage and the mushrooms. You let it boil a little bit. When the water boils you add the macaroni. This way you have the flavor of the meat in the macaroni. Wait 10 minutes until it is cooked and the stir. But you can keep a little bit of the boiled water and add it with the cheese.
Return the macaroni to the pot add your cheeses, a little bit of the boiled water and little butter for extra flavor. Add your spices of choice.
Wait for the cheese to melt and serve.

There you go. Mac and Cheese and then some.
As I told you this was the first time I did the recipe. Next time I would skip the cheese cream. It was a cheese overkill even for my own standards. And I would consume it in three portions, not two. No big deal, just some extra steps to level it up …
