We have been here in Fort Meyers for nearly two weeks and today our day barely got started before the rain and wind came.
The weather here in Florida is very temperamental........one minute sun and a comfy breeze. Next, sheets of rain and nearly hurricane winds.

Whats a Girl To Do.
Well......Bake of course. Airstream living is a pretty small environment, and baking can be a challenge. I have a gas cooktop/oven, I love the cooktop.....the oven, not so much because it's hard to regulate a temp for baking. Thank goodness I have a microwave/convection oven. The upside is I can bake cookies, cakes, roast etc.......the downside; it's small. I can only bake six cookies at a time. But, for two people this is just fine.
I typically will make a full batch and freeze some for a treat at a later time. These cookies are dense, chewy and have a nice coconutty, chocolate flavor.
Coconut Cookies with Mini Chocolate Chips
PREHEAT OVEN TO 375 degrees F
1 cup brown sugar
1/2 cup coconut oil
Cream brown sugar and coconut oil until well-blended.
2 eggs
1 TBSP vanilla
Add in 2 egg beat well, mix in vanilla.
2 cups flour
1 TSP baking powder
1/4 TSP baking soda
1/2 salt
Combine dry ingredients in separate bowl, blend and add to wet mixture.
12 oz. mini chocolate chips
2 cups shredded sweetened coconut
Add chips and coconut to blended wet and dry mixture.
Lightly grease a cookie sheet and drop teaspoon size dollops, about 2" apart
Bake for 10 - 12 minutes at 375 degrees F. Remove from oven and let cool on a metal rack.
Makes Approximately 36 cookies or about 3 dozen
