My family and I started back on keto!! This time of year is perfect to make a change. Here is a recipe that I found the last time we did keto and we love it. I hope you try it and enjoy it as much as we do!
INGREDIENTS
chicken
cream cheese
spinach
pepper jack cheese
turkey bacon
cheddar cheese (not pictured)
First thing I do is cut up my bacon into strips and start cooking them. I want to make sure they are done completely and a little crispy.
While the bacon is cooking I mix the cream cheese and pepper jack cheese. I like to shred the pepper jack so that it's easier to mix.
When the bacon is cooked, I add it my mix along with the spinach.
I like to make sure it's mixed evenly.
I then cut slices down the middle of my chicken breast. You can do a butterfly cut, I just like down the middle better.
Once the chicken is sliced I scoop a spoonful of the mixture in.
Ready to go in the oven.
I bake mine on 375 for an hour. I like to make sure the chicken is cooked through.
You can eat it this way or you can add more cheese on top. With the keto diet, cheese is good! I added cheddar cheese and then broiled it on high for 10 to 15 minutes. Basically until it was the color I wanted.
I added salad to complete the meal. It was delicious! and our son loved it!! I'm pretty sure
