Quesadilla with chicken

Ingredients
- 2 tablespoons of olive oil;
- 1 onion;
- 2 cloves garlic;
- 1 teaspoon ground chili;
- 1 teaspoon cumin;
- 450 g chicken fillets;
- 3 tomatoes;
- 2 tablespoons of tomato paste;
- salt - to taste;
- ground black pepper - to taste;
- 6 tortillas;
- 250 g of grated hard cheese;
- several tablespoons of sour cream;
- 1 avocado;
- a few twigs of parsley.
Preparation
Preheat a tablespoon of olive oil over medium heat. Fry on it finely chopped onions, then add chopped garlic, chili and cumin. Stir well and put the mince into the pan.
After the minced meat is fried, add 2 finely chopped tomatoes and tomato paste. Season with salt and pepper. Cook another 1-2 minutes, stirring occasionally, and remove from heat.
Lubricate the baking dish with oil and place one tortilla on the bottom. Lay on it a fifth of the vegetable filling and a little grated cheese. Repeat the layers and sprinkle the last tortilla with cheese.
Bake in a preheated oven to 200 ° C for 20 minutes until the cheese melts. Slightly cooled with quesadilla sprinkle with the remaining tomatoes, grease with sour cream, put on it slices of avocado and decorate with leaves of parsley.
