Homemade Chicken Caprese
Ingredients
- 1 tablespoon of olive oil;
- 450 g chicken breast fillets;
- salt, black pepper - to taste;
- ¼ balsamic vinegar;
- 2 cloves of garlic;
- 450 g cherry tomatoes;
- 2 tablespoons of fresh basil leaves;
- 4 slices of mozzarella.
Cooking
Heat the oil in a large skillet over medium heat. Season the chicken with salt and pepper, fry on both sides until golden brown and place on a plate.
Add balsamic vinegar and chopped garlic to the pan, fry for 1 minute. Then put the tomatoes, salt them and simmer on low heat for 5-7 minutes. Mix with basil.
Return the chicken to the pan with the tomatoes. Place the mozzarella on top and cover until the cheese has melted.
