My breakfast this morning needed a little bit of planning and preparation. Though this preparation isn't much work or complicated at all.
I prepared some spelt grains by filling them into a thermos flask, cooking some water and adding it to the grains. I also add a dash of sea salt. Then I went to bed and let the grains soak the water overnight.
Spelt is an excellent source of protein, dietary fiber, several B vitamins and minerals. Richest nutrient contents include manganese, phosphorus and niacin. Spelt contains much carbohydrates and is low in fat.
In the morning I drained the spelt. The result looks like this:
The grains are soft and fluffy almost creamy on the outside with a little bit leftover bite inside.
To increase the nutritional richness mix it with oatflakes and wheatbran which brings a lot of iron with them. The fruitiness and some bite comes from an apple cut into fine pieces. I mix everything with a plantal milk. Today it was an Almond-Rice-Drink.
Some pumpkin seeds make it more crunchy and some granola adds a little bit of sweetness and fun to my bowl.
Pumpkin seeds are calorie-dense and an excellent source of protein, dietary fiber, niacin, iron, zinc, manganese, magnesium and phosphorus, riboflavin, folate, pantothenic acid, sodium and potassium.
