Pasta is one of the ingredients that I love to eat in all its forms. I always try to find different and original options to invent my own versions to enjoy some good pasta.
Today I propose a personal interpretation of sautéed spaghetti with sardines that is truly exquisite. At first glance it might seem curious to combine the pasta with sardines, however I guarantee that the final result will enchant you.
Ingredients
250g of spaghetti, a can of sardines in oil, half a large onion, two cloves of garlic, four or five cherry tomatoes, a jalapeño pepper (optional), two tablespoons of olive oil, salt and ground black pepper.
Preparation
Heat water in a pot with salt and when boiling put the spaghetti. Leave them in sufficient time according to the indications of the brand so that they are "al dente", that is, slightly firm. When they are cooked, drain them and reserve.
Heat a little butter and oil in a pan. Cut the onion into pieces as well as the garlic cloves. Put them to sauté in the hot oil for a few minutes.
Cut the cherry tomatoes in two, slice the chili and add them to the onion. Stir and season with salt, pepper and fine herbs. Now add the whole capers and mix again very well.
Drain the sardines, cut them in two and add them to the pan with the onion. Stir gently to integrate all the ingredients without breaking the sardines.
Finally add a little olive oil and pour the spaghetti to the previous mixture. Stir and sauté for a few minutes. Eventually adjust the seasoning with more salt and pepper to taste.
