I came home from work this morning in the mood to make some breakfast. While at work I kinda formulated the idea of what I wanted to make. I knew it was a bag of saltfish, and a package of bammy in the fridge.
So off to the kitchen I go to get everything together. After taking everything out the fridge, I opened a can of coconut milk. I poured it in a boil, added some cinnamon and vanilla extract. After whisking the mixture together I cut up the bammy and placed it in the bowl to soak.
While the bammy was soaking (sorry no pic), I cut up some onions, scallions, garlic, scotch bonnet pepper, and thyme.
By then the bammy had already finished soaking. I had the saltfish boiling in some water and now the bammy frying up. I had a plantain that was getting overripe so I decided to add that after the bammy done fry. Nothing shall go to waste lol.
After the saltfish done boil, I flaked it and added to the pan with the onions. I also added 5 eggs and fried everything up together. This part was pretty a freestyle ting. This was the first time doing it like that. I usually add ackee instead of eggs. I must say it came out good and tasted awesome. That's the finished product in the cover picture. I think I'll give myself a big pat on the back.
I also had some celery, ginger and carrots so I made some fresh juice. Now to put the juicer to work. I think I might of burnt the motor out. This juice will definitely be good for my immune system. 🤔🤨
Breakfast came out real good. It's always dope to take a thought and turn it into something. One thing I must say is that I rate the old time country people from back then. Making everything from scratch is a lot of hard work. They had no gas or electric stoves. Just some coal or wood fire. No juicers, blenders, or food processor's. The more often I cook I gain a new found respect for my grandmother and great grandmother. They woke up from the crack a morning and started cooking breakfast for the family. By time yuh get up wipe dih cold out yuh eye and brush yuh teeth, breakfast ready.
In this day of fast and processed food, I'm glad I have the time and skill to make stuff from scratch. It's definitely a blessing and one I don't take for granted.
