The gelapaletas are my toxic relationship in the art of gelatins, I love how beautiful they are, the kids love them too but I hate the great job they do. > Si así tal cuál como les digo, las amo y a la misma vez las odio, no se a alguien más le ha pasado esto, que aman algo de sus trabajos pero al mismo tiempo lo odian. > Las gelapaletas son mi relación tóxica en el arte de las gelatinas, me encanta lo bellas que son, a los niños les encantan también pero odio odio el gran trabajo que estás dan. At the beginning when I started making this type of gelatins in the form of popsicles, my customers were very much in love with it, they all wanted popsicles, I made my calculations based on cost, amount of material and time it took me to make them and I set a standard price per unit at the beginning. I am a person who loves details, I love to make art with my work and I always put love in them (even if they are a lot of work) but the demand for this product was so high that I had to organize the prices in a better way. > Al principio cuando comencé a hacer este tipo de gelatinas en forma de paletas fue algo que enamoró mucho a mis clientes, todos querían paletas, yo saqué mis cuentas en base a costo, cantidad de material y tiempo que me llevaba hacerlas y puse al principio un precio estándar por unidad. > Yo soy una persona que ama los detalles, amo hacer arte con mi trabajo y pues siempre les pongo cariño (aunque den mucho trabajo) pero la demanda de este producto fue tan alta que tuve que organizar de mejor forma los precios. I believe that no craft or art has an exact formula, much less the way we work today will be the same as tomorrow, pastry is not a static art, techniques, tools, etc. keep changing and sometimes it is necessary to adjust prices by categories, even a pastry artist also goes up in category over time, and there are things that need to be updated. > El organizarlas por categorías me sirvió de freno y ahora le hago al cliente un trabajo en base al tipo de paletas que me pida y no me dejó dar rienda suelta a llenar de detalles si la persona no pago por esto. Estas paletas de hoy son del tipo intermedias. > Creo que ningún oficio o arte tiene una fórmula exacta, ni mucho menos la forma en en trabajamos hoy será la misma de mañana, la repostería no es un arte estático, viven cambiando las técnicas, herramientas, etc y a veces toca ajustar precios por categorías incluso una artista de la pastelería también va subiendo de categoría con el tiempo, y hay cosas que toca actualizar. Getting back to the subject of gelapalettes and why I don't like making them so much my specific reasons are: * They are a lot of work. * They require a lot of time. * They take up a lot of space in the fridge. * They require certain protocols of care for their elaboration much more delicate than those of normal gelatins.
