That Looks Like...!
Yeah, I know what it looks like, but believe it or not, it's surprisingly good.
Welcome, one and all to this week's edition of Grandpa Gotta Eat. I actually did cook what you see above, but since the cooking part really wasn't that difficult (even for me), I decided this week's entry into fell more into the eating category.
In case it is hard to tell what's sitting in that pan, that is indeed oatmeal, with chunks of apple, some crushed pecans, and a healthy dose of brown sugar, with a fried egg on top. Yes, on top, to be enjoyed together with the oatmeal.
I've eaten this a time or two before and really enjoyed it. I think, however, I forgot not to break the yolk, because the flavor was even better the last time.
The oatmeal was cooked for three minutes or so at boiling, and then I chopped up half an apple and added the pecans which I had previously smashed in a sandwich bag.
The egg was fried in olive oil on medium heat. I added salt and pepper.
I ate it out of the pan to avoid a bowl to wash, too. I'm all about keeping the cleanup to a minimum, whenever possible. That meant using the pot holder or hot pad you see underneath it to keep from scorching myself or the table.
It's part of my strict non-scorch policy.
Why This? Why Now?
I was reminded of this meal the other day because of a couple of articles I saw, one regarding eggs (we're back to wondering if they're really that healthy again), and the other about fiber (of which fruit, oatmeal and nuts are supposed to be excellent sources). Fiber, apparently, is the real superfood, with health benefits beyond the intestinal tract. I'll stop there. You get the idea.
I've been at that age for a while now where things that didn't use to hurt, hurt, such as, rolling out of bed in the morning, or reaching up to the top shelf, or bending down for something. Both my parents have been having health issues lately, and while they're over 25 years older than I am, it still has me thinking that maybe I should, you know, try to keep myself from falling apart even more, since my regular regimen of conserving energy by avoiding exercise and, you know, general movement, doesn't seem to be doing the trick.
Go figure.
So, There You Have It
I will probably try to have this particular breakfast meal once a week, while finding other things to consume. Maybe, get back into smoothies, since I'm supposed to eat a bunch of greens and fruits. Maybe even see a nutritionist to find out what foods will work best for me and my body.
Maybe.
