Once in a while we tend to be conscious of what we eat and put in our bodies, we worry if we are eating all the right food or if we are binge eating on empty calories.
I try as much as I can to add green leafy vegetables and protein into my diet to maintain a healthy me and to stay fit and energetic.
So when I am not dining out and checking new food and restaurants, I try to keep my meals more natural and healthy to keep balance. Hence, I recreate the famous subway salad.
The green crunchiness, protein and the salad dressings does so much more good than it being so filling and yummy, its also something you can eat to your full and not being guilty of later on!
Lo and behold my recreation of the subway salad ;)
Ingredients:
- Green leaf curly lettuce
- Purple romaine lettuce ( I use purple to add in some colour )
- Olives
- Red onions ( Sliced and dipped in salt water for 10 minutes, this is to remove bitterness of the onion)
- Green capsicum sliced into thin strips (you can add in other capsicum colour of your preference)
- Corn chunks (canned)
- Cucumber sliced
- Jalapeños (bottled ones, these are added for some spice)
- Cherry tomatoes
- Chicken strips ( I use the ones available in my country, they are packed and already cooked chicken grill strips, but I still fry them a little with olive oil)
For the dressings on top, I use the american garden dressings. I usually buy the lite or low fat one because they taste the same, but recently they were out of stock where I buy them from.
I also usually go light on the ranch, but the rest I add on to my desire :D
