Home recipe for BECHAMEL SAUCE
INGREDIENTS TO MAKE 1 LITER OF BECHAMEL SAUCE:
- 80g of flour
- 80g butter (or olive oil)
- 1l of milk
- 1/2 teaspoon nutmeg
- Salt and pepper
Preparation
1.- In a tall pot and on a low heat, put the butter and wait for it to melt. You can replace it with the same amount of olive oil or a mixture of both ingredients. When it has warmed up a bit, add the flour. As you can see, it's the same amount of flour as of fat. Mix with a rod , so that the sauce is oxygenated and is better integrated, and let toast 3 minutes, so that the flour loses its raw flavor.
2.- After the time, it is the turn to add the milk. And we're going to make it hot . Almost boiling. This will integrate much better with the mixture of butter and flour. In addition, to heat it we will also have added a pinch of salt, to enhance all the flavors. This done, we add it little by little . In batches of about 200ml. So, we add the first batch and mix well with the rod. We must wait until all the ingredients have been well integrated. Once achieved - at first it will be very, very dense - we add another 200ml of milk. We repeat the process ... And we continue doing it until we have finished adding it all. We will notice that, each time the béchamel is getting lighter and lighter.
3.- When we have added all the milk, we will obtain a light béchamel sauce. Very creamy Rectify salt, pepper and add nutmeg, which will give a delicious touch. We let the sauce cook 10 minutes more, while we stir from time to time.
