Recipe of Onion Soup
Ingredients
- 2 medium onions The sweeter they are, the better.
- 1'5l liter of broth . It can be meat or vegetables
- Grated cheese
- 1 tablespoon butter
- 1 glass of white wine
- 6 slices of bread
- 2 tablespoons wheat flour
- Salt and pepper
- Olive oil
Preparation
1.- Peel and cut the onion into thin strips. Then in a pan, we squirt oil and butter. Heat over low heat, until the butter melts and it is integrated into the oil. Once done add the onion, season and let cook, stirring occasionally about 10 minutes. Until it is limp
2.- Now add the flour and stir it while it is cooking, to eliminate its raw flavor. This flour will give a bit of body to the onion soup. Let cook 3 minutes and then add the white wine. Let cook 2 more minutes to evaporate the alcohol
3.- We add the hot broth. We remove for two minutes to eliminate possible lumps and let cook over medium heat for about 15 minutes more. Do not raise the fire a lot because when you bring flour, if you could go to the bottom and get burned, ruining the recipe.
4.- Finally, place the onion soup in individual bowls. They must be oven resistant. We put a slice of bread from the previous day on top. And on top of the cheese bread and, Baked, with the grill set at 200ºC! Until it has gratinated well.
