Looking for an easy weeknight dinner that is quick to make and super delicious? This is the one. Definitely making this again on busy evenings like this. With my cat being sick and me having to drive up to the capital (3h from where we live if traffic is ok), my parents arriving in a week and our latest project of opening a bakery/health cafe, peaceful moments seem to be over.
So expect some more 20 to 30-minute dinner creations in the near future!

Though I never work till late (we get up really early) a lot of my free time goes to cooking and steemit, which is such an inspirational environment not only to get ideas for vegan cooking......
At the beginning of our home working journey, we hardly stopped working since your work is your home and you love what you do. After 6 months, however, everything became too much and ever since Sunday Funday has been our non-work day. If we have time we take another day during the week or weekend!
Relaxation and enjoying life is so important! So don't forget to make time for the things and people you love!
So instead of spending hours in your kitchen, try this easy recipe and free up some precious time to do something non-work related ;)
"CHEESY" AVOCADO PASTA WITH CHERRY TOMATOES AND CELERY π π₯
INGREDIENTS (SERVES 3)
For the cherry tomatoes and celery sauce
- 1/2 cup onion, chopped
- 2 cloves of garlic, minced
- 1 cup celery, finely chopped
- 1-1.5 cup cherry tomatoes, halved
- 1/4 cup water
- 3-3.5 cups penne, uncooked
- 2-3 tbsp toasted sunflower seeds or pumpkin seeds or a mix
For the "cheesy" avocado sauce
- 1 avocado
- 1 lime, juice only (approx 1 tbsp lime juice)
- Sea salt and black pepper to taste
- 1/2 cup freshly chopped parsley
- 3 tbsp nutritional yeast (or more for stronger cheese flavor)
DIRECTIONS
- Cook the pasta according to the instructions on the package in lightly salted water. Drain when ready
- Meanwhile, saute the onion for 3-5 minutes. Then add the garlic and celery and cook for 5 minutes more before adding the tomatoes. Cook until heated through. this will take 2-3 minutes.
- While everything is cooking, combine all cheesy avocado sauce ingredients in a blender and blend until smooth paste.
- When everything is cooked, combine pasta, tomato-celery sauce, and avocado sauce. Mix well and serve with toasted sunflower seeds on top.
