Quinoa is yum, but oh my toasted quinoa will make your taste buds jump for joy! Yes, it's that good. So what are you waiting for?
Avocado, Red Beet and Orange Toasted Quinoa Salad Drizzled with Orange Mustard Dressing ๐๐ฅ๐ฟ
Ingredients (serves 2)
For the salad
1/2 cup cooked quinoa
2-3 cups salad green of your choice
1 avocado, cubed
1/4 cup finely chopped spring onion
1 orange, peeled and chopped
1 cup raw red beet, julienned (about 1/2 big red beet)
2 tbsp unsalted sliced almonds (optional)
For the dressing
0.5-1 tsp grated orange zest
1 tbsp fresh orange juice
1 tsp mustard
2 tbsp extra-virgin olive oil
1 tbsp walnut oil or more olive oil (avocado or other oils work too)
Black pepper to taste
Directions
- Cook the quinoa according to the instructions on the package.
- Combine all salad ingredients in a bowl. Toss to combine. Set aside.
- Whisk together all dressing ingredients. Set aside.
- To toast the quinoa, toss cooked quinoa with olive oil. Season with salt and pepper. Place in hot skillet or wok and toast until fragrant and slightly dried out. This will take 5-10 minutes.
- Combine all ingredients in a bowl or plate and drizzle with the orange mustard dressing.
