This avocado carrot spread was so delcious. It works well on a sandwich or can be eaten as a healthy snack with veggie sticks. We had this baby for lunch and luckily I made too much so we could eat both! Double avocado and carrot bliss.
Carrots are among my favorite whole foods. I love them raw, cooked, steamed, roasted, and any other way you can prepare them! Same goes for avocados. They are definitely my favorite healthy fat and protein source. From smoothies to salads and dressing to chocolate mousse, avocado is such a versatile fruit.
Though my hubby loves them too he isn't that much of an avocado addict like me. Too bad as I would add them to every dish. Though Hass avocados are yum, here in Cambodia we find other variations, not sure which. I am not much of an avocado connoisseur, I just love to eat lots of them hehe. But the good thing is they are grown higher up in Cambodia and only come t $2-2.5 a kilo.
Who would be able to resist buying a kilo or two of avocados every week? I sure can't.
And what do you do with the seeds/pits.... grow some more right?
CARROT AVOCADO PATE WHOLEGRAIN SANDWICH
INGREDIENTS (SERVES 2)
For the carrot avocado pate
1/2 avocado
1 cup carrot roughly chopped
1/2 orange juice only
2 tbsp extra-virgin olive oil
Black pepper and sea salt to taste
For the sandwich
4-6 slices bread of your choice
1 cup salad greens of your choice
1/2 cup tomato diced or sliced
DIRECTIONS
- Combine all pate ingredients in a small food processor or blender. Process until smooth.
- Optional: toast bread slices.
- Top bread slices with pate, salad greens, and tomatoes.
Enjoy the rest of your day!
