Zoodles - aka zucchini noodles - are the perfect light, vibrant and healthy meal. Plus, they are easy and fast to make. The only thing you need to do is spiralize a zucchini, chop some cherry tomatoes and whip up your favorite sauce or dressing to go with it.
Top with some extra seeds or nuts and voila. A healthy, quick and delicious meal.
I made the cilantro sauce by blending avocado, fresh cilantro, olive oil, garlic, red onion, lime juice, salt, black pepper and a little water to thin.
