Spiralized Greek Salad
This is my favorite go to salad after a long day, I love to munch on it while I binge watch my favorite TV shows. It takes less than 10 minutes to make, and will leave you feeling refreshed.
NOTE: You will need a Vegetable Spiralizer to make this.
Ingredients:
For the Salad:
- 2 Cucumbers
- 10 Baby Plum Tomatoes
- 4 oz Feta Cheese
For the Dressing:
- 2 Tbsp Extra-Virgin Olive Oil
- 1/2 Lemon, Juiced.
- 1 Tbsp. Apple Cider Vinegar
- 1 Garlic Clove (minced)
- 1/2 Tsp. Dried Oregano Leaves
- Add Salt & Pepper to your liking.
Directions:
Spiralize your cucumbers and shake them in a strainer to get rid of some of the moisture. Slice the tomatoes in half (optional).
In a medium sized bowl add cucumbers, tomatoes, feta and toss to distribute.
In a small bowl, mix together the olive oil, apple cider vinegar, lemon juice, garlic, and dried oregano leaves. Drizzle over salad and then sprinkle with black pepper & salt.
