I like soft scrambled eggs and tamagoyaki. I like the altered cross of the two: silky mixed tamagoyaki eggs flavored with sugar, soy, and mirin. Prepared on a soft bed of rice with nori.
Ingredients:
- 3 eggs
- 1 tbsp mirin
- 1 tbsp sugar
- 1 tsp light soy sauce
- 1/2 tbsp butter
- 1 white Japanese rice
- 1/2 package roasted seaweed strips
- Freshly ground pepper
Method:
In a small bowl, beat the eggs, mirin, sugar, and soy. Add the mix, and the butter to a cold pan.
Mix over medium-high heat so the eggs fry little by little and uniformly, pushing only once in a while so you finish up with big curds, about 2-3 minutes. Bloody is better as they’ll keep hardening off the heat.
Serve on top of a bowl of white rice, flavor with salt and pepper, and with nori strips on top.
