In celebration of the Holy Week. It has been a tradition for us Filipinos to cook some delicacies instead of eating rice. The most common delicacy that serves in every table is the "BINIGNIT" or the "HOT HALO HALO". So my mother and I decided to cook something different since our neighboor would give us some "BINIGNIT" also that's why we decided to cook Maja Blanca and Biko.
This is the MAJA BLANCA
This is the BIKO
THE PROCESS: MAJA BLANCA
Ingredients
-7 cups young coconut water
-7 cups water
-1/2 cornstarch
-1/2 white sugar
-1 can corn kernels
-1 can condensed milk
-1 can evaporated milk
-margarine
-cheese for toppings
Procedure
Mix all the ingredients mention above in a container.
And there's this cute little dude watching us saying good job. My nephew, the joy of our family. His name is Phil Andrey :)
So after mixing all the ingredients it will look like this. Make sure to dissolve the cornstarch completely.
Next is prepare the pan and place the mix ingredients on it in a medium heat fire. We prefer to used firewood because we believe it will taste better than that on electric one or stove. We also did put a margarine on it.
So just continually stir it until it became thick and paste like

This is it, it's already thick and paste like. It's now ready to transfer in a container.
The total time for preparation and cooking is about 30-45 mins.
Sprinkle some cheese for toppings and then refrigerate for the best taste. You can eat it after an hour.
And we're finished with our own version of MAJA BLANCA.
Down to our next delicacy which is the all time Filipino favorite, the BIKO
THE PROCESS: BIKO
Ingredients:
-1 klo. glutinous rice or "malagkit"
-1 klo. brown sugar
-6-8 cups coconut milk
-condensed milk (optional)
-raw sugar or "kinugay" in bisaya
Procedure:
Combine the sticky rice and water in a rice cooker and cook until the rice is ready
While the rice is cooking, combine the coconut milk with brown sugar and condensed milk in a separate pan and cook in medium heat until the texture becomes thick. Stir constantly.

Once the rice is cooked and the coconut milk-sugar mixture or the "Latik" is thick enough, add the cooked rice in the coconut milk and sugar mixture then mix well. Continue cooking until all the liquid evaporates (but do not overcook).
After the "Malagkit rice" was placed and mixed with the "Latik". Put a banana leaves on top of the pan and let it simmer for about 20 mins. Putting banana leaves will make the BIKO more delicious.
The total time for preparation and cooking is about 45 mins-1 hr.
Finally, scoop the cooked biko and place it in a serving plate then flatten the surface and sprinkle some "KINUGAY"
it's best serve whether in hot or cold. Both are so delicious.
