I have a small deep fryer which I do not use too often, but ended up pulling out over the weekend. .. I wanted some homemade onion rings!
I am not sure where I got this recipe originally, but I have been making onion rings the same way for a long time – beer battered! I start with some regular flour, and then I add in salt, black pepper and cayenne pepper. Once the dry ingredients are mixed, I add a can of beer and start stirring to create the batter.
I feel like the onion rings you normally buy barely have any onion in them, so I do two rings per onion ring, so they are particular thick and onion-y. I take my double onion, and coat it in the batter, and then drop it into the deep fryer. I usually use canola or corn oil, and I flip them around 2-3 minutes for about 5-6 minutes total per batch.
In this case, I also had a couple of jalapenos from my garden which I also deep fried in the same batter. The onion rings and jalapenos came out great! Here are a few pictures:
