I really like this recipe, because olive oil is more useful than
cream. In principle, you can do with another vegetable oil, but with
olive oil it's better.
3 oranges
200 g of sugar
4 tablespoons kefir
3 eggs
250 g flour (2 cups)
1½ tsp. baking powder
¼ tsp soda
a pinch of salt
50 ml of olive oil
Preheat the oven to 180 C. Lubricate the cake pan.
With oranges, peel off on a fine grater. Squeeze the juice.
Sugar thoroughly wipe with a peel or crank in a combine, so that the
sugar is absorbed by the citrus aroma.
Mix the juice with kefir. Add sugar, then eggs one at a time. At the
end add oil and mix everything.
Add flour, baking powder, soda and salt to the dough. (It's better to sift).
Put the dough into a mold and bake for 55 minutes in a preheated oven
or until the toothpick starts to come out clean. Cool it down. then
remove from the mold.
