On the special demand of my kids today I baked cookies. (Peanut Butter Cookies) To give it a healthy twist I used whole wheat flour and jaggery instead of refined flour and sugar.
It was little chewy, delicious and healthy.
Ingredients-
- Whole wheat flour 2 cups
- Peanut butter 1 cup
- Jaggery Syrup 1 cup or according to sweetness required.
- Peanut oil 1/4 cup
- Baking Powder 3/4 tsp
- Water as required to knead the dough
How to make Jaggery Syrup?
I used to make it by 1 kg jaggery dissolve in 400 ml water. bring it to a boil, cool down, filter and store in a glass container. This syrup can be used to make various recipes and a healthy alternative to refined sugar. If needed thick consistency use 300 ml water for 1 kg jaggery.
Procedure-
Mix wheat flour and baking powder and pass it through a sieve.
In a bowl take all wet ingredients ( Peanut butter, jaggery syrup and peanut oil) Mix well with the help of beater.
Mix wet and dry ingredients and knead a dough. use water wisely if required to knead a dough suitable for cooking. It should not be too soft. Keep the dough in the fridge for about an hour.
Preheat the oven to 180 degrees centigrade, meanwhile grease the baking tray with oil.
Make small size balls out of the dough and press with the help of a fork. Sprinkle some sugar crystals if you like, it is optional just for decorative purpose.
Bake cookies for 10-12 minutes at 180 degrees Celsius.
Cool down completely before storing in any container.
It made about 3 dozens of cookies.
