Polish apple pie reminds me when I was a child and my grandmother did just this cake 🤩 going into the house was the apple smell of cake I recommend to everyone to try this recipe.
Ingredients for medium sheet 20/30 cm:
Dough: 500g of sifted wheat flour, type 450 or 550, 250g of cold butter, 150g of sugar, 2 yolks, or a tablespoon of thick cream
Filling: 1.5kg of sour apples, 150g of sugar, 1/4 teaspoon of cinnamon, or a tablespoon of lemon juice
Powdered sugar for sprinkling the finished dough, egg to coat the top
Finish the cake with butter and sprinkle with breadcrumbs.
Cake: Yolks and sugar with 150g sugar. Pour the flour into the bowl, add the butter and chop the knife into smaller pieces. Add grated egg yolks and quickly make a smooth cake on your hand.
Divide the dough into two parts - 2/3 and 1/3 portion.
Spread the larger part of the dough into the bottom of the pan. Align the top and puncture with a fork. Cover with foil and put in the fridge for a minimum of 30 minutes. Then bake in the oven preheated to 180 degrees - 10 - 15 minutes, in gold.
Place the second part of the dough between two layers of parchment paper and roll out a thin cake (about 3mm). Also put in the fridge. Just before putting on the top, cut the strips.
Filling: Peel the apples, remove the seed nests and grate on a thick grater. Pour the juice, mix with sugar and cinnamon. Immediately put on the underside underneath, and at the top lay diagonally strips of the remaining dough. Brush with a beaten egg.
Bake for about 40 minutes at 180 degrees, for a golden color. After cooling, cut the dough into pieces and sprinkle with powdered sugar. Bon Appetit
