My client advised me of Bone Daddies, a fusion concept ramen shop near Berwick street in London. Although it’s not authentic ramen, their ingredients and approach is quite interesting.
They serve a 20 hour stewed tonkotsu (pork bone) broth. This dish came with Yuzu relish mixed in and karaage. Ramen traditionalist will scoff at karaage in their soup, but my verdict was that it worked quite well.
The addition of Yuzu really makes the flavors pop in your mouth. I added a little chili oil but ended up preferring it without - the Yuzu and tonkotsu mix is the best thing to be hitting your palate in this dish.
In the end I give it a 4 out of 5. Would definitely eat again (and pick up some vinyl on Berwick street).
