I make my pizza dough in bread machine on dough setting using the following recipe:
1 1/2 cups of water (80-90*F), one teaspoon of sugar, 2 teaspoons of sea salt, 2 tablespoons of olive oil, 4 cups of all purpose flour and 2 1/4 teaspoons of yeast (I use active dry yeast)
While bread machine is busy making pizza dough prep your toppings and shred enough cheese for 3 medium size pizzas. Next step is up to you, you can use cheese strings or you can cut your own mozzarella sticks for the crusts (approximately 6-8 depending on the length of string cheese or your cut)
When dough is finished divide it into 3 equal portions (kitchen scale is a great aid but you can eyeball it) and roll it with a rolling pin using the pizza pan as your guide (dough must be at least an inch or two wider than the pan so you can fold it over the cheese strings/sticks). Place the cheese sticks around the rim of your pan, fold the dough over, pressing down tight and smooth the seams with the crust itself.
Now top your pizza and bake in the oven between 425-450F 13-17 minutes.
