Recipe to Make Yorkshire Parkin
120g soft butter
120g soft dark brown sugar
60g black treacle
200g golden syrup
230g medium oatmeal
115g self-raising flour
2 tsp ground ginger
1 tsp ground mixed spice
2 medium eggs, beaten
1 tbsp milk
Pinch of salt
First set the oven to 140c 120c fan
Line a 8" square baking tin with grease proof paper
Now to start making the mixture
Gently heat a pan and add the butter, sugar, treacle and golden syrup and stir till everything is melted.. Don't let the pan get too hot.
Set the pan to one side and allow to cool
Using a mixing bowl
Add all the dry ingredients, sieve flour if needed. Then add the melted mixture from the pan. Beat the 2 eggs and milk and add those. And gently fold together
Pour mixture into the lined tin and bake for 1.5 hours.
Don't let it dry out. It should be sticky
Leave to cool for 20 minutes then turn out onto a baking tray
Cut into squares
This can be eaten warm or cold and is very nice with hot custard.
