Mapo tofu is a popular Chinese dish from Sichuan province. You almost can see it in every Chinese restaurant s menu.
It looks hard to make, but actually is quite simple if you know the Asian sauces.. this is my edition of easy mapo tofu recipe
First we need to mince or slice some fresh galic, chilli, ginger . Cut tofu into 2cm cubes,prepare some minced pork or beef,3 tsp corn flour,Chinese Chili oil ,black bean sauce,soysauce and sugar,salts.
Heat up the pan with olive oil , put in chilli , garlic ginger and meat
When meat colour changes, put in tofu
Brown both sides of tofu
Put 1tsp black bean sauce,sugar and Chinese chilli oil, stir fry in low heat
Put a cup of chicken stock(no salt) or water, cook it medium heat until boiled
Pour in corn flour mixture(3tsp cornflour in a cup of water)
Mix everything in circle slowly until it comes to the right consistency .
Mix in chopped spring onions and 1tbs light soysauce
Then it s done! It s best to be served with a bowl of freshly steamed rice
It s actually not as spicy as it looks
My little girl thinks mint is super spicy but she can have a lot of mapo tofu with her rice!
