What do you do when you love spicy food but don't really like eating veggies? You could make a spicy veggie dish! I cook veggies almost everyday for my kids, but for myself I don't really cook veggies. It's not that I don't eat veggies at all or hate veggies. If someone would prepare a meal with veggies I would not have any problem to eat the veggies.
For this dish I used lots of mushrooms, carrots, sugar snaps and broccoli. I love using sugar snaps because they are so crunchy! Because I used chilli peppers, it made the dish extra interesting to eat.
Ingredients
3 large onions
4 cloves of garlic
3 lombok peppers
2 small rawit peppers
1 piece of fresh ginger
1 tablespoon corn starch
500 gram mushrooms
300 gram carrots
250 gram sugar snaps
400 gram broccoli
Cut the carrots (into rounds), brocolli and mushrooms.
Take a pan, add enough water and boil the carrots 5 minuts and the brocolli florets 4 minutes.
With a food processor, grind onions, garlic, ginger and chilli peppers.
Take a large wok pan and heat it with a few table spoon of sunflower oil. Cook the onions, garlic, ginger and chilli mix for about 12-15 minutes. Keep stirring at medium heat.
After 12- 15 minutes, add the sugar snaps and fry for 3 minutes. Don't fry too long because they will lose their crunchiness and vitamins.
After 3 minutes add the mushrooms and stir for another 3 minutes.
At last, you can add the carrots and brocolli florets and stir fry for another 3-5 minutes.
You can eat the spicy veggies either with or without rice. If it isn't spicy enough, you can just add more chillies or chilli sauce. To finish it, you can eat this with a fried egg and fried onions.
