Not eating meat doesn't mean giving up pastry snacks! I think the original recipe was for meatless meatballs from Good Housekeeping magazine.
Ingredients
250g mushrooms
1tbsp olive oil
75g cheddar cheese
40g ground almonds
1/2 red onion or one whole small one.
125g fresh breadcrumbs
1tbsp soy sauce
1 medium egg.
caramelised red onion chutney (optional)
A food processor is your friend for this recipe, I usually make the breadcrumbs wipe it out then blitz the mushrooms until finely chopped - no processor -chop them by hand. After moving to an off grid property without electricity I have still made these successfully by hand!
Heat the oil in a large frying pan over s high heat and cook the mushrooms until they are tender and any liquid has evaporated. Set aside to cool completely.
I basically then chuck all the remaining ingedients left into the processor add the cooked mushrooms and blend together with some seasoning.
I use ready made puff pastry and roll it out to make the sausage rolls. To add something special spread some caramelised red onion chutney on the pastry before adding the mushroom filling. Cook until pastry in golden brown, I usually egg wash the pastry before cooking. If sausage rolls are too much faff you can make one big pie with shortcrust or puff pastry!
