I continue adding vegetables to my breads, this time it was the turn of yucca, cassava or tapioca, which are some of the names by which this delicious and nutritious tuber is known. Most of the cassava breads are prepared from its starch, however I have prepared this with the boiled tuber, a little more work but undoubtedly a more natural product and free of so many chemicals.
Many add dairy-based salted white cheese to this preparation, however, I opted for a vegan version, a soy cheese that also added a delicious flavor. It's a simple preparation even when it requires a little more work than other preparations I've shown you, but without a doubt the result is well worth the effort.
Its texture is a little denser than those made with starch, but its flavor compensates, ideal to accompany a delicious cup of tea or coffee, at home everyone was in love with them, but come with me and I show you can make them. Enjoy! .

On the other hand we are mixing the wheat flour with the baking powder, and continue adding to the mixture of cassava on the side, we begin to integrate and pass the preparation to an allowance to continue integrating the wheat flour and kneading, this process suggests doing it little by little, until we have integrated all the wheat flour.
Knead until you get a soft dough that does not stick to the fingers, then cut into small portions and shape our buns, which we have in a baking tray previously greased, these breads will not grow in the oven and do not merit a process of leavening, go directly to a preheated oven at 220 ° C, for about 25 to 30 minutes, or until you introduce a toothpick this comes out clean.
The result, beautiful and golden yucca breads, with a spectacular contrast of flavors, the right touch of sweet and salty, which makes it ideal for a rich snack or share with our friends and family, remember, accompany them with a rich cup of coffee.
