These days, when I am on a healthier diet, I miss my pasta, and tarts.
And I found the perfect recipe to satisfy my cravings for carbs.
VEGGIE LASAGNA
No fancy ingredients, a lot of cheese and the taste is wow! Where can you go wrong when you add parmesan and mozzarella? ๐
ingredients
1 eggplant sliced
1 zucchini sliced
Onion chopped
Garlic chopped
Tomato sauce
Basil and thyme
50 g mozzarella
15 g parmesan
5 ml olive oil
- Preheat the oven at 180C. Bake eggplant and zucchini with basil and thyme for 20-30 minutes.
- In a pan, add the olive oil, then start building your lasagna: one layer of eggplant, tomato sauce mixed with garlic and onion, mozzarella, zucchini. The last one should be mozzarella.
- Bake for 20 minutes. Before serving, sprinkle parmesan.
I know itโs a fake lasagna, but the taste is similar.
