It starts with putting a little oil in the pan and crisping the outside of the Gardein meatless meatballs, and then I pour sauce into the pan and let the balls simmer.
I topped them with seasonings and some shredded non-dairy mozzarella, after I felt like I wouldn't need to stir much more.
Updating a previous concern that I had, I was able to use up the paltry tomato sauce that I had neglected in lieu of opening a new jar of Rao's.
This brand is called "Rinaldi", and I actually think it's really good for the price.
After using snob tomato sauce a few times in a row, I was in the mood for Rinaldi.
While I was waiting for the noodles and the meatballs to finish cooking, I fixed a little side salad for myself.
A little roughage can go a long ways. Sometimes I get in this rut where when I'm not eating super amazingly, I just ignore the idea of incorporating some whole fruit and veggie high-octane type of foods. It's not hard to grab a handful of spinach and eat that in addition to whatever yummy thing you have. It doesn't have to be all or nothing.
I would have made my salad a little bigger, but the spinach is low and I wasn't sure if would want some later, so I took half of the remaining amount. That seems proper. (Tomorrow my salad will be half that size if we don't go to the store.)
Eventually the noodles were ready.
And after I did my signature "pour over" technique, the meal looked like this:
I paired it with an iconic Arizona Iced Tea.

And because I was hungry I also opened up the Wachusett brand barbecue potato chips.
They're the GOAT barbecue chip. But they use MonoSodium Glutemate and all the dirty tricks. Not a natural talent.
I like to eat to completion, to the point of being full. So having chips on the side can be nice. I don't have to err on the side of making too much food, I can just eat chips tailored to how hungry I still am as I'm eating.
