Ridiculously Easy Cookie Edition
As a spectacularly busy mother, I am often waylaid with a "what the heck do I even bring to this bleepin function" moments. I like to call them Popup Events, for they always seem to spring themselves on us in a most grandiosely random fashion. I'm talking about the times when you need a snack for a 4-H meeting and didn't know about it until last minute, or when your homeschooling neighbor texts and says, "Hey! we can get lift tickets to Lookout Pass if we donate 4 cans of food per person!"
Being somewhat of a Frugal Fran, I love it when the local establishments run special deals that make it practical for families to partake in some fun. Skiing and snowboarding are expensive, especially in my neighbor's case, as she has four boys! Lift tickets for kids are $33 a pop! YIKES! So tomorrow, a very thankful group of homeschoolers are going to ascend Lookout Pass for some hillside shredding fun, and we don't have to hike back up the hillside for another run, we can ride in a CHAIR! AHHH!
Sorry, I get excited easily about conveniences. Anyway, back to the snack thing. We are all packing lunches to feed our snow patrol horde with, and this particular snow board lunch in need instance called for one of my favorite quick, fast, and in a hurry dessert recipes: Cake Mix Cookies.
I think I have extolled the virtues of my favorite in a hurry cookie recipe before, sometime last year, but this particular variation deserved a shout out. Before I get to the how to, I must throw out a couple of disclaimers:
1. These cookies have no redeeming value health-wise. At all. There is absolutely nothing good for you about them.
2. If you have allergies to dairy, peanuts, soy, etc...Just keep scrolling, this is not the recipe for you. Don't worry though, I won't leave you hanging, there are plenty of healthy recipes in the works for those that can't partake of the processed horridness of this post.
Unpleasantness dispatched, let's get to the good attributes of this cookie recipe. From start to finish, I can have 3 dozen cookies prepped, baked, and cooling on my counter in about 30 minutes. That's how awesome this recipe is! Cake mix cookies are not anywhere near amazing as the one's always lets me nibble on every time we meet, (Sigh. I love her baked goods.....dang it! Now I need a brownie!) but they are always inhaled and receive glowing reviews every time I make them, so there's that.
The above picture includes everything needed to make cake mix cookies. A box of store bought cake mix, 2 eggs, and 1/2 cup vegetable oil is all it takes folks! I had some Macadamia nuts languishing in the snack cupboard, and they just begged to be added into this batch of cookies, along with some milk chocolate chips.
Into my LimeAid mixer went the white cake mix, eggs, and oil. I make sure that I mix everything until well blended and then I add any additions that I desire. Well, any additions that happen to be in my cupboard. It's okay to get creative here, one time I added chopped up peppermint candies and mint extract to a chocolate cake mix and it was DELISH!
I then scooped out tablespoons of my never fail cookie dough onto my restaurant sized cookie sheet and popped the future cookies into a 350 degree Fahrenheit oven for 11-12 minutes. Don't over bake these little gems, you want them lightly browned on the edges.
They are not a crispy cookie, rather they are more of a chewy bit of bakery fresh heaven!
Even if baking is not your thing, these cookies are so simple and inexpensive to make. I've never had a batch go foul on me, and the flavor combinations are endless!
Cake Mix Cookies
1 box cake mix (any flavor your desire, for this batch I used white cake mix)
2 large eggs
1/2 cup vegetable oil
Add ins! I used 1 cup chopped macadamia nuts and about 1 1/2 cups milk chocolate chips in this batch)Mix cake mix, eggs, and oil in a mixing bowl until well combined.
Add in your add ins, whatever you desire!
Place rounded tablespoons of dough onto an ungreased baking sheet and bake in a 350 degree oven for 11-12 minutes.
Cool and devour!
