Today I come back with "How to make The Old Fashioned Caramelized Cinnamon Apple Pie?"
Well, I was trying to enjoy the last nice and bright day lately, spend times outside as much as I could before the winter hit the town. And...Today I've got no choice than to stay inside because the snow finally showering the town since last night. Then, the idea of making Apple Pie came out since I have so much fresh Apple from my neighbor's tree.
To be honest, this was my first time of making Apple Pie. I have made Raspberry Rhubarb couple times though.
Anyways...My simple and old fashioned Caramelized Cinnamon Apple Pie turns out pretty good and tasty!
My hubby had them twice already!
Ok, Ok, let's get to the recipe and methods
First, I made also the homemade Pie Crust, again this is also my first time I made it myself, normally I just buy them from the store. It's more no choice actually, Haha. I was home all alone, no more pie crust stock and no one is driving me to get them from the store, but I'm happy that my crust also turns out pretty good too.
How To Make The Crust?
Using your fingers, mix the flour, sugar, salt, vegetable oil, butter, and lemon juice in a large mixing bowl until just combined. And then, gradually add in some cold/cold water as needed, or until dough just comes together.
Divide dough into half, and shape into 2 disks.
Wrap each disk in plastic wrap, and refrigerate for at least an hour or two.
The Filling
Step 1
While the dough is chilling, peel, core and slice or you can even chop the apples into roughly slices or chunks. Whatever you like.
As you cut the apple, place them in a large bowl and sprinkle with lemon juice to help keep them away from turning brown.
Step 2
In over medium heat, stir together the butter, granulated sugar, and brown sugar until slightly melted and then add in the apples chunks.
After few minutes, add in the cinnamon powder and toss well to combine.
Step 3
When the apples are about half cooked, drain them. And continue cook the rest of the sauce/caramel until little bit more thicken.
Pour those thick caramel into the apples, toss to combine.
Unwrap remaining chill crust, don't forget to cut half of the dough disk into strips for the top/cover.
Carefully fit the dough/disk into deep dish/glass pie plate.
Transfer the filling into prepared crust, lightly smooth out the filling until even. (You don't want it mound in the centre)
Step 5
Arrange the strips in a lattice design over the filling.
Trim strips to be even with the bottom crust, fold dough edge under.
Prepare the egg wash and sugar cinnamon for sprinkles.
Using a pastry brush, brush egg mixture evenly over the pie crust.
Sprinkle them with cinnamon sugar.
And last, bake in the 400 degrees F for 20 minutes, reduce the oven temperature to 350 degrees F and continue baking for about 30-40 minutes until juices are thick and bubbly, crust is golden brown.
INGREDIENTS
Dough
- 2 1/2 cups Flour
- 1 tbsp Sugar
- 1 tsp Salt
- 3 tbsp Vegetable Oil
- 1 cup Cold Butter
- 1/4 cup Ice Water (or as needed)
- 2 tsp Lemon Juice
Filling
- 8-10 Apples (cut,cubs or chunks)
- 1 tbsp Lemon Juice
- 1/2 cup Sugar
- 1/3 cup Brown sugar
- 1 tsp Cinnamon Powder
- 2 tbsp Butter
Egg yolk for wash and cinnamon sugar for sprinkles.
