Today's Meatless Mondays Meal is Linguine Primavera. This light meal is full of a variety of healthy vegetables that will leave you feeling satisfied. It's easy to prepare and only takes about 25 minutes from start to table. Let's get started.
Prep
Time about 15 Minutes.
Thoroughly wash a broccoli bunch.
Cut up the broccoli into bite sized florettes and set aside.
Wash eight to ten asparagus spears,
cut into one inch pieces and set aside with the broccoli.
Clean and slice one large carrot. Set aside with the broccoli and asparagus.
Wash a medium sized red pepper.
Cut pepper into 1/2 inch square pieces and set aside.
Wash two Roma tomatoes.
Dice the tomatoes and set aside.
Remove the papery skin from one large clove of garlic
and coarsely mince the clove. Move the garlic to a microwave safe bowl
and add two tablespoons of olive oil. Set aside.
Place a large pot with 2 quarts of water on the stove set to high.
Cooking
Time 10 minutes.
When the water starts boiling add one half pound Linguine.
Let the pasta boil for four minutes then add the broccoli, asparagus and carrots. Continue boiling.
Let the pasta, broccoli, asparagus and carrots boil for four minutes then add the red pepper. Continue boiling for two mintues, then remove from heat.
While the pasta is cooking, microwave the garlic and olive oil for 60 seconds.
Once the pasta has been removed from heat, add the tomatoes and drain thoroughly.
Return the pasta/vegetables to the pot and add the garlic and olive oil.
Add 1/2 cup grated parmesan to pasta and toss until thoroughly mixed.
Place pasta in large serving bowl and garnish with additional grated parmasen.
Serve with warm breadsticks fresh from the oven. Feeds four to six people.
