4 Table Spoons of butter
1 Onion
1 pound of mushrooms
3 tablespoons of flour
1 tablespoon of paprika
3 cups vegetable stock
3 tablespoons soy sauce
1 cup of milk
1/2 cup of sour cream
1 tablespoon of lemon juice
1 tablespoon of fresh dill
1/4 cups fresh parsley
salt
pepper
Instructions
First you want to melt the butter in a large sauce pan, medium heat. Then add in the onions and mushrooms and cook for about 10-15 minutes (until mushrooms release their liquid).
Mix in the paprika and flour and then cook for 2-3 minutes.
Then add in the stock, milk and soy sauce and bring it to a gentle boil. Reduce the heat and let it simmer for 10 minutes.
Remove form the hear and mix in the lemon juice, sour cream, parsley and dill. Seasons to taste with salt and pepper.
Review: I thought the soup tasted great. You really need to add the salt and pepper after to your preferred taste but other than that, I liked it!
