I am currently following the Ketogenic diet. I struggle with finding meals that my whole family can eat as well as me, lets face it who really has time to cook two separate dinners?
I know that this meal does incorporate corn and beans, but if you are following a keto diet just leave them out or incorporate a very little bit into your wrap. I mostly used corn to add a little color plus my kids love it.
You won't even miss traditional wraps because the jerk chicken and vegetables create an amazing flavor sure to awaken your oral sensory palette.
Jamaican Jerk Chicken with Zucchini Wraps
Ingredients
- 4 chicken breast or thighs
- 1/2 bottle Walkerswood mild jerk seasoning
- 2 zucchini
- 2 carrots
- 1/2 red cabbage
- 1 red pepper
- 1 green pepper
- 1 can of black beans
- 1 can of corn
- Mozzarella cheese
Directions
1. Marinate chicken in Walkerswood jerk seasoning
2. Slice red and green peppers into thin strips
3. Julienne carrots
4. Shred red cabbage into thin strips
5. Drain and rinse black beans
6. Drain corn or use fresh boiled corn
7. Using KitchenAid vegetable sheet cutter make zucchini wraps, cutting into 5 inch sheets
8. Cook chicken in a little bit of olive oil or sesame oil on medium heat for 4-5 minutes per side
9. Rest chicken for 5 minutes then slice into strips or cubes
10. Assemble wraps with desired ingredients and enjoy.
