I was planning on just picking up some fresh ground beef, which I also did, but while perusing, I noticed a small lil niblet of raw beef, staring me in the eyes. Now, if you don't know, I am a rib-eye kinda guy, and I wasn't looking for steak since I was planning on making ground beef tacos...
But when a deal smacks ya in the face, you accept it, and make the best of it, in this case....
FILET MIGNON TACOS!!!
This lil bad boy was .3 something ounces and set me back a whopping 3 dollars and some change. Ring me up!
After 2 quick minutes on each side on my cast iron, into the oven it went to finish. Like I said, it wasn't a whopper by any means, so my cooking time was much shorter than a traditionally sized filet. But I think I nailed med-rare pretty damn close.
Now to assemble:
Heat up to soften tortilla and sprinkle (in this case) asiago parmesan shredded cheese and let it melt.
Layer on the filet.

Now, I wouldn't normally put a filet mignon into a taco, but the price was too good not too. And I have to say, it was one of the better tacos I've had in my life. Filet is just so tender, it all just melted away in my mouth. I'm gonna be keeping my eyes peeled now every time I go to the grocery store to see if I can snag some more.
