I have to eat, but that also means I have to out and mingle amongst people here in London. The city is in a semi lock-down, the majority are staying as much as possible, there still a lot of people venturing out for all sorts of reasons.
I have been in self-isolation for nearly a week now. I developed a 'persistent cough' that woke me up in the middle of the night and according to guidelines, I was told to isolate myself. But before all this happened, I ventured out for some fresh air and to stock up on ingredients. The biggest supermarket is like 10 minutes or so from where I am staying. When I got outside, I was surprised to see how little people there were around. The most I saw were waiting to enter the very supermarket I needed to shop in.

I was in and out in a flash with my goods. I wore a face mask and the minute I left the shop I sanitized my hands. Again washing them thoroughly with soap when I got back to my sister's place.
Now that I had some ingredients, I decided to cook myself a Chili corona con carne and I did so using the following...
Ingredients:
3 small red onions
As much garlic as you can handle
1 tin of chopped tomatoes
Half a tin of kidney beans
200g of minced beef
Herbs
Chilli peppers
Salt and Pepper
The process is as following and is super easy:
BROWN your onions. This releases the sugar in the onion and brings your dish to the next level.
Now add your chopped garlic. This is a good time to add salt, pepper and any herbs you like or have.
Stir and fry for a few minutes to release the flavours.
Add your minced beef and brown it off. If not, your dish will be clumpy.
Sweet find in the airbnb flat. Add as much chilli as you can tolerate
Looking good so far.
Now add your tin of tomatoes. I add a little extra water to help boil down everything. Simmer for at least an hour. the longer the better in my book.
15 minutes before finishing up. Add your tinned kidney beans.
Here you go, my Corona con Carne dish. Today I made some couscous instead of rice. I forget to get some at the shop, but it was just as good and soaked up all the juices.
It has been a while since I have shared my cooking and recipes with the community. Seeing as I have a lot of time indoors, you should expect to see many more of these delights.
