Before I go on with description of this dish, first let me say that I am an Asian-American with the love of food from all over Asia cultures. I don't just love it but I also love to try my hands at cooking the food after tasting it at it's most authentic. Please forgive me in advance if I botched some ingredients, as this is the most important at each dishes.
Although I kind of have an idea of what goes into this squids and tomato dish; know as pusit, I created my own version. Yes, bagoong is a must but I didn't have any at the time so I replaced it with some fish sauce....please don't hate. I had to cook some today.
Pusit is a dish of whole squids cook with sauté onions, shrimp paste (bagoong) and tomatoes. That's pretty much it! But I have no shrimp paste.
Here's my version of Pusit:
Squids: 2.2 pounds/1kilo
Tomato: 2
Snap peas: about 12
Orange: 1 squeeze for juice
Garlic: 1 large piece minced
Ginger: a tiny bit minced
Fish sauce: a tea spoon
Those are the ingredients. Not original but pretty darn delicious, IMHO! And that was pretty easy and fast cooking. About ten total minutes.
