I always say that as a vegan you really don't have to miss out on ANYTHING! There is vegan burgers, pizza, lasagna, and so on and so on. And most of these delicious things can not only be made vegan but also healthy and most of the time there is an easy raw vegan version as well. Today I'd like to share the raw version of my vegan cauliflower bolognese sauce with you guys - this is the perfect summer dish for hot days!

Ingredients
- 4 large zucchinis (green or yellow) for the raw vegan pasta
- 1 head of cauliflower
- 1 rod of spring onion
- 2 cloves of garlic
- 500 g fresh ripe tomatoes
- 6-8 dried tomatoes (soaked)
- handful of celery leaves
- 1 tsp sweetener of choice like date syrup
- optionally 2 tsp nutritional yeast flakes
- salt, pepper, dried basil and oregano to taste
Instructions
- Wash the zucchini and make noodles using a spiralizer.
- Cut the cauliflower into florets, wash them and process them into "minced meat" using a food processor or knife.
- Mix the spring onions, garlic, dried tomatoes and celery leaves in the food processor.
- Cut the fresh tomatoes into halves, cut out the green part and mix seperately.
- Mix everything for a few seconds only (!) in a blender or food processor.
- Fill up a plate with zucchini noodles, add the raw bolognese sauce and optionally sprinkle with some nutritional yeast flakes.
