Gricia is a style of pasta that is prepared with Pecorino Romano cheese, Black Pepper, Guanciale, and a bit of salt. It’s a traditional Roman dish that dates back to 400 AD. It's essentially a Cacio e Pepe with Guanciale, which is pigs cheek. It tastes a lot like bacon, so when I got back to the states I decided to give the recipe a try substituting the Guanciale with Bacon. Here's a look at how it turned out!
You can use my quick and easy Cacio e Pepe recipe to get started. Fry up some thick cut bacon and slice it up into thin little chunks. Toss it into the Cacio e Pepe and you're good to go!
