I got this cool little gift which came with this Mexican Tortilla Soup Mix and it looked really good and pretty easy to make since I cook beans at least twice a week anyway.
The cool thing is that everything, including the spices, is already in the little package and it is very cool how all ingredients are packed in the order, which you will be cooking.
I didn't have any diced tomatoes, so I made my own diced tomatoes from fresh tomatoes. You can check my post on how to make diced tomatoes from scratch here
Also, this recipe also calls for some ground beef, but because we are trying to cut as much meat out of our dishes and lifestyle, I decided not to use any meat. I'm pretty sure it tastes amazingly with the meat, but this just was my choice and it still turned out pretty delicious.
The first step into preparing this soup was to cook the first half of the beans in this package, by pinching/separating the package before the chickpeas, for an hour.
I also added a clove of garlic to my beans.
Then I would add all the remaining ingredients with a 28 OZ can of diced tomatoes, which I didn't have, so I prepared my own diced tomatoes.
Then I cooked the soup for another hour and a half.
The soup is supposed to be served with 1 tbsp of sour cream and crushed tortilla chips and some grated cheese.
The soup turned out really good, but a bit spicy, which was good. I guess if I added the ground beef or chicken, the soup would not be as spicy.
The Mexican Tortilla Soup was a success, especially since we love Mexican foods and eat them quite often.
