Usually the banitsa that I tend to make takes a bit of time to be rolled up and carefully placed in the baking pan due to the phyllo sheets being thin and easily breakable because of the dryness of it. This time I decided to try a bread style banitsa, where instead of rolling the sheets with the stuffing inside, we sliced the sheets into strips.
The mixture is made up of (eyeballing) 4 eggs, 200 grams of white crumple cheese, 1/2 a cup of plain yogurt, 1/2 cup of soda water. Add salt if the cheese isn't salty enough. First buttering the pan. Then goes half of the phyllo sheets. Next is half the mixture (evenly spread). And repeat one more time. Before putting it into a pre heated oven, coat the top with 1 beated egg yoke for the golden brown coating.
Around 30 minutes later, the bread is ready. Pull it out, slice it up and its extremely good while eaten hot with plain yogurt on the side.
